A knitting cause that either knits for needy people or a cause which knits, sells knitting and uses the money to benefit a cause.
How about "Purls Of Compassion"
I did a search and didn’t find any other charities(I think) that have that name.

How about "Peace Knits".
Not only would you be providing peace of mind for someone who might not have the funds to purchase warm items; it would also provide peace to the soul for the contributors. I find knitting peaceful.

Some play on words involving "purl" rather than "pearl." My mind won’t get me any further than that.
How about "The multi gauge purls?" I could come up with a better one, but my wife is needling me.

Are you also prepared to "file" for non-profit status? Regarding sales of items with intentions to "give" FUNDS to a charity — Trust me, could lead to a very "sticky" situation with the "powers that be," unfortunately, no matter how high your ideals/intentions are!
You are better off just choosing a "generic" group name (ie: Loving Hands of Rockford), meet once in a while (at member homes, yarn shops, coffee houses, bookstores, etc.), gather all your items up once in a while, and then donating your items directly to a "needy" organization already set up for items/donations — like http://www.snugglesproject.org/ (making cats/dogs in shelters little "sercurity blankets," etc.). Or a particular homeless shelter, womens shelters, etc. within your own personal home area – makes for a warm & happy feeling for all involved!! (Also very handy to be able to identify/fill SPECIFIC items needed!)
Be sure to include a letter specifically identifying your group’s name (and participating member’s names) to hand in along with your donations, and perhaps send a copy of this "transaction" to local media. Keep a group "scrapbook with copies of these letters, pics, newspaper articles, etc. – it really makes the group as a whole more fun and enjoyable!
Hope this helps you out!!
